Beet Blondies

Are you guys sick of blondies yet?  Am I throwing too many out there?  Sorry, but I'm not sorry.  Blondies are dead simple to make, endlessly adaptable, and fricking delicious.  So I'm going to wrap this week of vegetables with a veggie blondie.  Beet Blondies with White Chocolate, to be specific.

Good.  I mean, it's hard (practically impossible!) to smell food over the web, but if you could, you'd be rushing to my kitchen right now for these brownies.  And I'd probably let you nosh down about 3 of them before I told you what was in them.

Celebrating Sochi with some Boozy Borscht!

So, in case you haven't heard, there's some winter Olympics going on in Russia right now...


Also in recent news, my hubby bought me a great little recipe book called Apothecary Cocktails: Restorative Drinks from Yesterday and Today for this past Christmas, and I've really been enjoying trying some of the concoctions in it.  One, in particular, seemed like a perfect fit for this event: Roasted Beet Borscht with Sour Cream and Vodka.  I mean, ALL THE RUSSIANNESS!!!!

Spring CSA Week 1

I've had a grin on my face all day.  Because...

Today was the first day of the year for our veggie CSA!

We got a newsletter beforehand telling us what to expect, and since I saw bok choy and harukei turnips on there, I decided to set the rice cooker before we went to pick up, because I could throw together a mean stir-fry with those field-fresh veggies.  After doing that, the kids and I headed to the farm...which happens to be about 5 minutes away, smack dab in the middle of the Chicago suburbs.

Beet Haters Got to Hate

Confession time:  I hate beets.

You see, because I'm big on veggies, people assume that I love all of them.  And that's just not true.  I do like most of them, but some, especially the sweeter root veggies and squashes, take a lot of convincing for me.  I'm not big on earthy sweetness, I guess.  Beets have never been near the top of my list.  Honestly, they don't even make the list.

I always tell my kids not to say that they hate a vegetable.  I tell them that they may not like it in the way it was served, but they just have to find the way that they WILL like it.  And I use my arsenal of cooking techniques to convince them that it's true.  So far, it's worked pretty well for me.  None of them are big fans of steamed zucchini, but they love it shredded up and crisped in olive oil with a little salt and pepper, and they adore it in muffins.  So now, if you ask them, they will tell you that they like zucchini.  And if you give them something and tell them that it is zucchini, they will not have an adverse reaction to it.  As any parent of young children knows, that's the biggest part of the battle.
