Kahlua Spiced Mocha Nuts

Remember when I made Malibu coconut almonds and I told you that there are endless ways you can mix the recipe up?  And also how easy and quick it is?


Well, here's backup for my argument.  Kahlua spiced mocha nuts.  I timed myself making them, and they were, start to finish, 17 minutes.  And I also switched laundry in the middle of that!



Heat the oven to 350 degrees.  Put a sheet of parchment on a cookie sheet.  Scoop out 2 cups of nuts of your choice...I used almonds and pecans today.  Toss them in the oven (if it's not completely preheated, it's okay...I won't tell!) and bake them for 8 minutes.


While the nuts are in the oven, grab a pot and pour in a cup of sugar and 1/3 cup of Kahlua.  Give it a quick stir to combine, and then let it boil until it comes up to 238 degrees Fahrenheit on a candy thermometer.


While that's boiling, and the nuts are roasting, grab a small bowl and mix 2 teaspoons cocoa powder (I like the Dutch dark cocoa), 1 teaspoon cinnamon, and a sprinkle of cayenne.


Take the nuts out of the oven.

Once the sugar mixture comes to temp, stir in the cocoa mix.


Drizzle that delicious concoction over the nuts, and stir them around.  Break them apart when they start to get more sticky.  Keep stirring until they've cooled.



Share with friends you love, or hog them all to yourself.  These are fantastic over some vanilla bean ice cream!
